From my Environmental 240: The Urban Farm class, we were lucky enough to receive a small starter kit of supplies to begin our gardening. There were a couple different seeds available which included seeds for a variety beans, carrots, lettuce, zucchini, and beets. Included were also lighter soil, compostable coconut rind pots, and these dried little pots that expand upward as it absorbs water.

There isn't much space to plant large amounts of seeds so I started with one of each. I began by pouring soil into four of the coconut rind pots and placed one beet and carrot seeds in the smaller packed pots that already had soil within them. By reading the directions and doing some research on the seeds, I poked holes to the desired depth of each seed and placed them inside. I placed all the pots into a plastic container I had lying around big enough to fit them all in. This would ensure easier maintenance for transportation and watering. After tucking all the seeds into their beds, I filled the water container till it barely filled the bottom half of the container. I watched as the bottom of the coconut containers began to turn a darker color from the water. The pop up pots almost immediately sucked the water and expanded right up. I didn't expect much from these small seeds to grow since they were as small as the tip of my pinky, and some even smaller.

That said, I did check it the very next day, and the couple of days after when I started to see some green peeking out of a few pots. I was a little impressed.
